Vegetable, Lentil, & Farro Stew

Vegetarian camping requires more than quesadillas as a main entrée, no matter how much hiking you do. This healthy concoction is a quick way to simmer up some goodness with plenty of flavor and no need to bring along 30 spices. It is also full of items you can keep on hand for whenever you need something to throw together quickly.


  • 2 zucchinis
  • 1c farro
  • 1 can of roasted red peppers
  • 1c lentils
  • 4c water

Simmer over heat until water evaporates and the consistency is of a stew (about 15-20m). If you are vegan, this is the perfect meal all by itself or with a little avocado on top. If you are not vegan, you will find that feta is a great little boost to this one pot meal.
